Texas Pete® Spicy Szechuan Marinade

    • 1 C. Texas Pete® Hotter Hot Sauce
    • 1/4 C. Szechuan Spice Mix
    • 1/4 C. Lemongrass*, fresh, chopped
    • 1/2 C. Olive oil

    YIELD: 2 cups
PORTION (Serving Size): Use marinade to coat or cover protein entirely.

    1. Place all ingredients in a large mixing bowl and whisk until thoroughly mixed.  Depending on the cut of meat you are using you will marinate the meat anywhere from 12-24 hours in the refrigerator.  Tender or small cuts of meat can marinate for 12 hours while tougher or larger cuts can marinate for up to 24 hours.
    2. When you are ready,  remove the meat from the marinade and scrape off any excess marinade from the meat before cooking.

*If you don’t have fresh lemongrass,  substitute lemongrass puree from the grocery store.  Lemongrass puree = 2 tbsp as a substitute
