Texas Pete® Spicy Greek Chicken Salad

    Ingredients

    • 24 oz. Alfredo Sauce, prepared
    • 8 oz. Texas Pete Buffalo Style Wing Sauce
    • 1 1/2 tsp Black Pepper
    • 6 lbs Rotisserie Style Chicken, cooked and cut into 1/2 – 3/4 ” pieces
    • 4 C Grilled red onion, coarsely cut into 1/2″ dices
    • 2 C Coarsely chopped Kalamata Olives
    • 2 C Sun dried tomatoes in oil, drained and julienned
    • 1 tsp Finely chopped garlic
    • 12 Tbsp Chopped fresh Italian parsley
    • 6 Tbsp Chopped fresh Basil
    • 4 Tbsp Chopped fresh Oregano
    • 18 oz Crumbled Feta Cheese

    Directions

    YIELD: 7 quarts
    PORTION (Serving Size): 1/2 cup

    1. Combine Alfredo sauce, Texas Pete® Buffalo Style Wing Sauce and pepper.  Set aside.
    2. Toss chicken, onion, olives, sun-dried tomatoes, garlic, parsley, basil and oregano in large bowl with Alfredo mixture. Top with crumbled feta cheese.
    3. Refrigerate until service.
