Texas Pete® Raging Grilled Salmon Reuben

    Ingredients

    • 1 C Thousand Island Dressing
    • 3 Tbsp Texas Pete® Garlic Hot Sauce
    • 1 C Sauerkraut, well drained
    • 1/4 C Bacon, cooked, chopped
    • 2 slices per sandwich Rye bread
    • 1 Tbsp per sandwich Butter, softened
    • 8 oz. fillet per sanwich Salmon fillet, skinned, grilled
    • 2 oz. Swiss Cheese, thinly sliced

    Directions

    YIELD: 1 sandwich
    PORTION (Serving Size): 1 sandwich

    Preparation

    1. Whisk Thousand Island dressing and Texas Pete® Garlic Hot Sauce together in a small bowl and refrigerate.
    2. Combine sauerkraut and bacon in a small bowl and refrigerate.

    Assemble Sandwich

    1. Butter one side of each slice of bread.
    2. Place half the Swiss cheese on the unbuttered side of one slice of bread.
    3. Top with ¼ cup sauerkraut and 2 tablespoons of the Texas Pete® Garlic Thousand Island Dressing.
    4. Lay salmon fillet on top of the dressing and top with the remaining Swiss cheese.
    5. Top with the second slice of bread, butter side out.
    6. Grill over medium high heat until until golden brown on the bottom.  Flip and cook until the other side is golden brown and the cheese is melted.  

    Serve immediately with a side of Texas Pete® Garlic Thousand Island Dressing for dipping.
