Place the 3 cups of white rice and the 6 cups of water in a medium-sized saucepot with a tight fitting lid. Season with the salt and bring to a boil. Once the water begins to boil, place the lid on the pot and turn the heat to low and let the rice steam for approximately 30 minutes or until fully cooked, light, fluffy and tender. Remove the rice from the pot and place it in the refrigerator to cool.
When the rice is cool, place it in a large mixing bowl. Add the drained pinto beans, diced red bell pepper, mango and the fresh cilantro. Mix everything together well.
Next, prepare the dressing. Mix the CHA! By Texas Pete® and Jamaican Jerk sauce together. Pour the dressing over the rice and bean salad and mix together. Season with salt and pepper and keep the salad chilled until ready to use.
