    CHA! Crispy Fried Artichokes with CHA! Lemon Mayo


    • 1-14 oz can Canned artichokes in water, whole, 8-10 count
    • 1/2 C Cornstarch
    • 1/2 C Olive oil for frying
    • Salt and pepper to taste
    • 1/2 C Mayonnaise
    • 1/2 Lemon. juiced, fresh squeezed
    • 2-3 Tbsp. CHA! by Texas Pete®


    1.     Drain the can of artichokes.

    2.     Cut the artichokes in half keeping the core intact so the halves don’t fall apart.

    3.     Place the cut artichokes on paper towels cut side down to absorb any excess water.  Dry off the artichokes as much as possible.

    4.     When the artichokes are dry, place them in a large zip-lock bag and add the ½  cup of cornstarch.  Shake the bag well to coat all of the artichokes completely with the cornstarch.  Let artichokes sit in the bag for 2-3 minutes before beginning to fry.

    5.     Place a large sauté pan on high heat.  Add the olive oil.  Once heated, remove the artichokes from the zip-lock bag and carefully place them into the pan and fry them for 2-3 minutes on each side or until they are golden brown and crispy. 

    6.     Place them on paper towels to absorb excess grease and season them with salt and pepper.

    7.     Mix the mayonnaise, fresh squeezed lemon juice and the CHA! by Texas Pete® in a mixing bowl.

    8.     Arrange the fried artichokes on a serving platter along with the spicy CHA®! mayonnaise and serve.
